Garlic Butter Salmon Pasta

Garlic Butter Salmon Pasta

INGREDIENTS

340-400 grams BC salmon filet

Kosher salt and ground pepper

1 tbsp extra-virgin olive oil

340 grams (12oz) spaghetti

4 tbsp unsalted butter

4 large garlic cloves, finely minced

¼ tsp ground pepper (or ¼ tsp chili flakes if you want this to have a little heat)

½ tsp kosher salt

2 tbsp lemon juice

1 cup freshly grated parmesan cheese

Kosher salt and freshly ground pepper to taste


Garnishes:

Shaved parmesan and fresh parsley leaves

Optional: sliced garlic, sauteed in a bit of olive oil until golden brown


INSTRUCTIONS

  1. Preheat the oven to 375F and line a baking sheet with parchment paper.

  2. While the oven is heating, bring a large pot of salted water to a boil on the stove top.

  3. Add the salmon filet (skin side down) to the parchment paper lined baking sheet. Season with ½ tsp kosher salt and ¼ tsp ground pepper. Drizzle the salmon filet with 1 tablespoon of olive oil.

  4. Bake the salmon in the oven for 15-18 minutes or until the salmon is cooked through to your desired doneness.

  5. While the salmon cooks, cook the spaghetti according to package directions for al dente. Reserve ¾ cup pasta water before draining the pasta.

  6. To a large high-sided skillet (or use the pot you cooked the pasta in), add the butter over medium heat. When the butter is melted and starting to bubble, add the minced garlic and cook for 1 minute until fragrant. Add the ground pepper (or chili flakes), kosher salt and lemon juice, stir to combine and cook for 1 minute. Pour in the reserved pasta water and turn the heat to medium-low.

  7. Then, add the cooked pasta and sprinkle all of the freshly grated parmesan cheese over top. Stir / toss the pasta continuously until everything is combined and you have a glossy, creamy sauce enveloping the noodles. Taste and adjust seasoning with salt and/or pepper if desired. Immediately remove from the heat.

  8. Once the salmon is removed from the oven, use a fork to flake the salmon off the skin into large pieces. Serve portions of the pasta topped with pieces of flaked salmon OR gently stir the flaked salmon into the pasta before serving.
