Kung Pao salmon marks Aquaculture Awareness Week

B.C. FARM-RAISED SALMON FEATURED AT BEIJING HOUSE RESTAURANT TO CELEBRATE AQUACULTURE AWARENESS WEEK

CAMPBELL RIVER, B.C. – Aquaculture Awareness Week in Campbell River will have a new flavour this year. Beijing House Restaurant chef Eric Zhao is fusing his native northern Chinese cuisine with B.C. farm-raised salmon in a new signature dish: Zhao’s Kung Pao Salmon. Chef Zhao developed several dishes using salmon raised by Cermaq Canada but decided on Kung Pao salmon as his first feature dish.

Mr. Zhao, Beijing House owner and chef, brings his northern Chinese Szechuan cuisine to Campbell River and is excited to be a part of celebrating Aquaculture Awareness Week in his adopted hometown. “Salmon is not traditional in Chinese cuisine, but its popularity here in Campbell River makes it a natural fit for Beijing House,” said Chef Zhao. “B.C.’s fresh farmed salmon has the ideal texture and rich flavour to stand up to the strong seasonings in Szechuan cooking. Our customers are very eager to try this new pairing.”

Chef Zhao has fused a classic Kung Pao chicken dish that originated in the Szechuan province in southwestern China and will use salmon raised by Grieg Seafood in Nootka Sound and processed at Walcan Seafood on Quadra Island.

Aquaculture Awareness Week is being celebrated in a number of salmon farming communities on Vancouver Island, including Campbell River, during the week of September 21 to 27. Kung Pao Salmon will be available for a limited time only at Beijing House Restaurant in Campbell River beginning Monday September 22.
